Introduction.

Odor control with ozone in the former airport hangars

This time, we are looking at two fast food restaurants located in a large shopping center, not too far from one of Sweden’s largest cities.

Previously, the shopping center actually used to be aircraft hangars. At that time, they were the largest hangars in northern Europe, and since then, they have been redesigned and renovated into the shopping center that they are today. This is a long-term project: the first stores were established in the 70’s and the area keeps growing and evolving.

The problem.

The two fast food restaurants in the shopping center were struggling with the kitchen exhaust air.

Commercial kitchens produce a great deal of exhaust air, and if not treated properly, the air can cause quite severe problems. The untreated exhaust air contains a lot of grease and odor particles: grease particles slowly but surely start to form grease buildups in the ducts, and these buildups serve as excellent fuel for potential duct fires. Duct fires can be incredibly destructive and hard to put out. The odor particles can cause very disruptive odor situations, which make life difficult for both employees and customers.

In this case, the two restaurants also wanted to make energy recovery possible: with the help of a heat exchanger, it is possible to extract the heat energy present in the exhaust air. However, the exhaust air has to be sufficiently clean in order to make the process as efficient as possible.

The solution.

We at Mellifiq were happy to deliver and install the Ozonetech RENA Kitchen Solutions system at the two restaurants.

This system, tailored for commercial kitchens specifically, are very powerful and treat the exhaust air by injecting ozone into the air stream. The ozone breaks down both grease and odor particles, preventing grease buildups in the ducts and unpleasant odors in the vicinity of the restaurant. Since grease buildups are kept away from the ducts, fire safety is massively improved. The treated exhaust air can also be used in an energy recycling process without any problems.

In addition, the RENA Kitchen Solutions has very low operating costs and its security system is top-notch: if anything out of the ordinary happens, the system shuts down and alerts our Service Center.

Evaluation.

Our solution has now been operational since 2018 at the fast food restaurants.

It has proven itself to be very effective against the high amount of grease and odor particles in the kitchen exhaust air, and the restaurants are also able to recycle the heat energy efficiently. Furthermore, the restaurants have managed to become more sustainable by using our solution and reducing their carbon footprint.
