
Mellifiq treats kitchen exhaust air for food court
Introduction.
This time, our client is a large, South Korean business conglomerate.
Having started out as an explosives company back in the 50’s, they have since expanded their company profile and now dabble in things such as finance, retail, and aerospace as well. They also have some company operations abroad, such as R&D in states like Germany and the US.
The problem.
Our client owns a high-end department store franchise that sells brands like Gucci, Fendi, Armani and Ermenegildo Zegna.
The department store franchise was on the lookout for a treatment solution for the food court at one of their shopping malls. They wanted a treatment solution that was as high-end as their products, and so, they turned to Mellifiq to see what we could offer.
The solution.
We at Mellifiq delivered a total of three Ozonetech RENA Kitchen Solutions systems to the client, one RENA 80 model and two RENA 60 models.
Systems from our Kitchen Solutions series treat the exhaust air by injecting concentrated ozone—produced on-site by integrated ozone generators—directly into the kitchen ducts; this effectively eliminates grease and odor particles. The process is fully automated, and with the integrated generators only needing electricity and oxygen from surrounding air to produce ozone, nothing needs to be replenished regularly. The systems are able to handle several kitchen hoods at once, and thanks to them being fastened on a movable steel plate, they do not have be placed in the kitchen, which saves space.
Thanks to this treatment process, grease buildup on the walls is avoided; this keeps the fire risk level at a minimum and the need to manually clean the duct walls is greatly reduced. Furthermore, once the exhaust air is purified to this extent, extracting and reusing the heat energy from the exhaust air becomes possible.
Evaluation.
Our RENA Kitchen Solutions systems now purify the kitchen exhaust air coming from the food court kitchens, minimizing odors and grease buildup in the ducts.
During the colder periods of the year, the heat energy is also recovered successfully, which reduces costs for our client.
