Traditional restaurant implements exhaust air treatment solution from Mellifiq to reduce odor problems and fire risk
Introduction.
Mellifiq keeps ducts clean with ozone treatment at historic Stockholm restaurant
The restaurant that we are assisting in this project is very famous; located in one of Sweden’s largest cities, it is more or less a cultural institution with a long history.
The first guests were served in 1867, and in 1891, the new owner decorated the restaurant with beautiful pieces of tin. Artists, journalists. and other cultural icons are frequent visitors of the restaurant. The menu was and is still traditionally Swedish, with the restaurant serving classic dishes such as Biff Rydberg or Wallenbergare.
The problem.
Like many restaurants, our client had difficulties treating their kitchen exhaust air efficiently.
Kitchen exhaust originating from commercial kitchens contains a great deal of grease and odor particles; these particles can cause severe problems in case they are not treated properly. Grease buildups quickly start to form in the ducts, increasing the risk of fire, and the untreated exhaust air can cause serious odor problems for neighbours and employees alike.
We at Mellifiq were happy to provide a solution for the restaurant.
The solution.
For this client, we delivered and commissioned a Ozonetech RENA Kitchen Solutions system.
The Ozonetech RENA Kitchen Solutions systems are some of our most powerful systems. They are specifically designed to purify kitchen exhaust air originating from commercial kitchens, and they do so by injecting ozone into the exhaust air stream. This successfully removes grease and odor particles from the exhaust air.
This has multiple benefits: the ozone makes sure that the ducts are free from grease buildups, preventing dangerous duct fires that are hard to put out. The odor from the exhaust air is also reduced to such a degree that it is unnoticeable. Once purified, the heat energy in the exhaust air can also be recycled efficiently by using a heat exchanger.

In addition to the many benefits that the Kitchen Solutions system offers, it is also a very safe system. It automatically shuts off in case of an error, and through remote monitoring and support, our service center is able to restart it and provide technical assistance if needed.
