Introduction.

The disturbing odor as well as the complaints from the neighbors just disappeared

In this project, we’re helping out a classic restaurant that is beautifully situated on a island loved by both tourists and locals in one of Sweden’s biggest cities. The restaurant has been a popular gastronomic feature in the city since 1897 and is most famous for the dish that we Swedes call a “plankstek”, i.e. a grilled steak served with duchess potatoes and a Béarnaise sauce on a wooden board. This influence has given the restaurant a well-deserved reputation ever since it first opened in 1874.

The restaurant was recently renovated, reopening again in 2011. The restaurant is now considered to have one of Sweden’s most beautiful dining rooms.

The problem.

Grease in the sewer system has become an increasingly large problem. The municipal sewer system is not designed to handle large amounts of grease from restaurants or similar businesses, like municipal commercial catering. Media, such as the prominent newspaper Dagens Nyheter, has reported that there are about 50 sewage clogs caused by just fat every year in Gothenburg alone.

When wastewater cools down, the grease in it solidifies and gets stuck on the walls in the sewage pipes. This eventually clogs the pipes and can lead to a blockage. To prevent the grease from being released into the sewage pipelines, all businesses that handle food in significant quantities must install a grease trap. By looking at Swedish cities, you can notice a clear difference between cities where grease trap requirements are stricter and cities where the requirements are more relaxed.

Therefore, we can conclude that grease traps are crucial when it comes to assisting the sewage system. However, they can cause inconvenience by emitting odors that disturb their surroundings. As grease accumulates, bacteria begin to grow and in turn, hydrogen sulfide starts to form. Hydrogen sulfide, which is a corrosive and toxic gas at high concentrations, has a very strong odor that is similar to rotten eggs.

At our current customer, the bad smell started spreading from the grease trap to the surroundings. Soon enough, the neighbors started filing complaints about the odors and so, the problem had to be addressed as soon as possible.

The solution.

The restaurant’s property manager contacted the company in charge of servicing the grease trap, and in turn, that company contacted us at Mellifiq for advice on how the odor problem could be fixed.

A mutual decision was made to install an ACT-3000P ozone generator. An ozone generator cleans the air with the help of ozone that quickly breaks down hydrogen sulphide and other odors. The ozone is injected directly into the grease trap venting so that the odor problem is reduced both when the grease trap is operating and when the grease trap is emptied.

The Ozonetech ACT-3000P is designed to reduce smells from e.g. grease traps. It generates ozone in a closed, air-fed chamber. The air is supplied from a separate pump to guarantee that a sufficient amount of ozone is generated.

Since the ozone generator produces ozone on-site, no refills are needed, whether that be chemicals or any other substance. The ozone air treatment starts as soon as the ozone generator is connected, with the ambient air around the generator acting as its raw material. Free raw material, no transport.

Evaluation.

The benefits of the Ozonetech ACT-3000P are many. After the installation, we noticed an immediate improvement. The horrible smell around the restaurant disappeared, as did the irritated neighbors. You will also avoid strong smells disturbing the surroundings in the future, even when grease trap is being emptied.

Our ozone generator  and the odor reduction that it provided did not lead to any major extra costs for the restaurant. The total energy consumption for the ozone generator and the pump is at a modest 32 watts, and the total operating cost is at about 20-30 dollars per year. Compare this to the operating costs for systems that require constant service and maintenance: in those cases, it is not unusual to pay many hundreds of dollars per year.
