
Danish fish smokery chooses ozone solution to tackle odor problems in the surrounding neighborhood
Introduction.
For this project, our client is a company located in the old fishing port of one of the biggest Danish cities, and when it comes to producing smoked fish, our client has a long history in the field.
The traditional smokery that they operate is a family business, founded in the early 1900s. The craft and recipes have been handed down from generation to generation for the last century. The whole production process at the smokery is done by hand, which ensures an absolutely astounding product quality.
The problem.
Production operations, like smoking fish, usually release the smoke resulting from the food production process into the atmosphere, which tends to cause odor problems in the surrounding area. In this case, the fish is first smoked in an oven, and the smoke produced there is then released into the air through two chimneys.
Over the years, the smokehouse has seen increasing numbers of residential buildings in the area, which led to an increase in complaints from the new residents. Due to this, the local authorities have requested the smokery to reduce the smoke odors emitted by their chimneys.
The solution.
The smokery therefore decided to contact Mellifiq. In order to remove the smoke odors caused by compounds such as diacetyl, acetic acid and 2-pentanol, they ended up ordering an Ozonetech RENA Pro B3 ozone system, designed by Mellifiq and equipped with a WBK1550S closed cooling system as well as a S900 ozone sensor.
The system was commissioned on-site by one of Mellifiq’s technicians. In order to effectively treat the emissions originating from the two chimneys, ozone is injected directly into the chimneys while they’re operating, quickly reducing the amount of smoke particles released into the surrounding air.
Evaluation.
A while after the installation, the preliminary measurement results came in, and we were very pleased to see that the odors from the smokery had been reduced by 70-90%. Of course, the local authorities were just as pleased with the results as we were.
