Introduction.

Built-in air purification keeps the duct channels clean

The client that we are helping out this time is a commercial real estate company founded in 2001 and owned by the Swedish state. They own, develop and manage train stations, station areas, maintenance depots, freight terminals and combination terminals along the Swedish railway.

As a company, they have a large focus on sustainability: their goal is to be completely climate neutral by 2045 and they work towards this goal by mainly looking at and optimizing their construction projects, which are the main sources of environmental emissions for the company.

 

The problem.

Our client has a hamburger restaurant as a tenant in one of its properties. In all large kitchens, fat deposits are built up in the ducts and these must be cleaned with a high-pressure washer regularly to reduce the fire risk.

Our client wanted to reduce both the fire risk and the cooking odors in the surrounding area and therefore, they reached out to us at Mellifiq for help.

The solution.

For this situation, Mellifiq delivered a high-performance Ozonetech RENA Kitchen Solutions to the client. Its task was to clean the entire airflow coming from the two large kitchen hoods installed above fryers and grills in the restaurant.

The system treats the exhaust air by injecting concentrated ozone directly into the kitchen ducts, which effectively eliminates grease and odor particles. The ozone is produced on-site by an ozone generator which allows ozone to be distributed to one or several hoods. This gives our client great freedom to place the equipment where they want as long as it is somewhat close to the kitchen. The system only requires electricity and oxygen from the ambient air in order to produce ozone. The process is fully automated, and nothing needs to be replenished regularly.

Thanks to this treatment process, grease buildup on the walls is avoided; this keeps the fire risk level at a minimum and the need to manually clean the duct walls is greatly reduced. Furthermore, once the exhaust air is purified to this extent, it also starts being possible to extract and reuse the heat in it.

Evaluation.

Our Ozonetech system has done a stellar job of treating the greasy exhaust air while also significantly reducing the odor problem. Ozone purification is a proven way to increase fire safety, reduce costs and prevent cooking odors from becoming a problem for the surroundings.

The solution has also enabled an efficient energy recovery. Large kitchens consume large amounts of energy, they are bona fide “energy thieves”, and the heat energy in the exhaust air accounts for a large proportion of that energy consumption. The heat exchanger that is currently active at the restaurant is able to recycle about 65% of the heat energy in the air.

The benefits of installing our ozone treatment solution in restaurant kitchens are many: It is possible for an ozone system to save you tens of thousands of dollars per year. Once the equipment is installed and operating, a very quick and painless process in itself, hardly any maintenance is required since the system is self-propelled and does not require operational personnel on-site.
