Introduction.
Treating the kitchen exhaust air from a luxurious bistro
For this project, we’ll be working on a property in one of Sweden’s most luxurious areas.
In this exlusive area, most properties were built in the 18th and 19th centuries. Our current client bought a property here with the intention to renovate it and make it as luxurious as possible. The restaurant venue by the street, specifically, would become a bistro, open from early morning to late night. In addition to serving both lunch and dinner, the bistro also hosts popular brunches on the weekends.
For those who would rather bring something home, there is also a deli and a bakery associated with the bistro!
The problem.
The property had previously served as an office building and had now been renovated into a residential apartment building, with the bistro being on the ground level. Our client was in need of a system that could treat the kitchen exhaust air while also minimizing grease buildup in the ducts and emissions of unpleasant odors. They were also looking for a solution that would go along with their sustainability profile; they wanted to start recovering energy from the treated exhaust air.

The solution.
The client carefully considered different options for their situation and eventually decided that an Ozonetech ozone system would meet their requirements. More specifically, a RENA Kitchen Solutions system was installed to treat the kitchen exhaust air, reduce grease buildup, and reduce odor emissions. By reducing grease buildup and keeping grease away from the ducts, the fire safety also increased drastically as a result.
Thanks to the Kitchen Solutions system removing grease from the exhaust air, it was also possible for the client to start recovering energy from it. As a result, they could start reusing it for their venues. By using our ozone system, heating costs for venues can be reduced up to 80%!

Evaluation.
All in all, our ozone treatment solution for the bistro worked very well, and after some further fixing in the property to fix incorrect airways, everyone was pleased with the outcome.
