Introduction.

Eliminating grease in order to recover heat and reuse it in the property

This large Swedish property company, and our client for this project, started using ozone systems for their kitchen ducts very early.

Large real estate companies were pioneers in ozone purification. They own the venues and normally shoulder all the costs for their tenants’ energy consumption. If you, like our client, own properties worth SEK 30 billion, each percent is valuable if you want to reduce energy consumption. When it comes to our client specifically, ozone technology is nowadays used in more than ten restaurants located in their properties, including the well-known pub and restaurant that we will be looking at in this text. Most of these restaurants are able to recover heat energy from the kitchen exhaust air and reuse it as well.

The goal of our client, however, is to make heat recovery possible in all properties with active ozone treatment processes. Their reasoning is easy to understand: they simply want to reduce the total operating cost per square meter in their property portfolio.

The problem.

In 2011, our client rebuilt one of their properties so it could host a pub and restaurant business. In June of the same year, two small air-fed ozone generators were installed to remove grease and odors from the kitchen exhaust air before releasing it into the environment. During the years 2013 and 2014, our client also decided to start reducing their energy consumption by recovering and reusing heat from the kitchen exhaust air.

However, our client faced a problem: since the venues were going to host a pub business, it was predicted that they would end up preparing and serving quite a lot of hamburgers. This meant that they would be doing a lot of frying in the kitchen and due to this, they needed an air purification system that would be able to handle such large amounts of greasy exhaust air. Likewise, just like our client, the business owners also wanted to reduce their environmental impact by looking for a better ozone solution.

The solution.

The property owner then decided to reach out to us at Mellifiq in order to see if we could come up with a suitable solution!

To meet their requirements when it came to both heat recovery and treating the greasy extract air, the two previous air-fed ozone generators were replaced by an oxygen-fed Ozonetech RENA Kitchen Solutions system. The property owner also took the chance to upgrade their service agreement to its premium version, which includes remote monitoring, free replacement parts in case something breaks, and a lifetime warranty.

The Kitchen Solutions system successfully removed grease from the kitchen ducts, and thanks to this, it was also possible for the client to start recovering energy from the exhaust air. As a result, they could start reusing the energy for their venues, just like they wanted to. By using our ozone system, heating costs for venues can be reduced up to 80%!

Evaluation.

A year after installation, everything works well for the pub, and the Ozonetech Kitchen Solutions system is remotely monitored around-the-clock. Both the property owner and the business owner have achieved an efficient, reliable solution with very low environmental impact thanks to our technological solution!

Furthermore, our client has since then installed our Ozonetech Rena Kitchen Solutions system in several other venues where they host restaurant businesses. They have repeatedly chosen our technological solutions because they are proven to be effective and reliable. Ozone systems also require minimal effort from the property owners.

Besides the property owner, the business owner also took a liking to our product and have since then chosen to install our products in many of their restaurants.
