Östermalms Saluhallar dates back to 1888 – with the world’s most modern purifying system
Introduction.
Centrally located market hall treats its kitchen exhaust with RENA Kitchen solutions to improve fire safety and reduce odors
Influenced by the Eiffel Tower finished in 1886, the cast-iron structure of Östermalms Saluhallar was finished in 1888, inaugurated by King Oscar II later that same year. Since then, it has been a gastronomical center-point for residents as well as travellers. Following a complete renovation finalized in 2022, the City of Stockholm opted for Ozonetech’s RENA Kitchen solutions – when only the best is good enough.
The problem.
Östermalms Saluhall is located in the heart of Stockholm’s most exclusive district, with residential buildings, offices and a public square nearby – there’s zero-tolerance for unpleasant odor disturbances. The large number of restaurants in the hall, all with their own ductwork and hoods, high flows and odorous exhaust poised a challenge.
The fact that the building is over 130 years old added another layer of complexity with cramped spaces, making it impossible to install generators in direct proximity to the hoods.
The solution.
Decentralized ozone systems was a key to solve the issue at hand and with numerous injections necessary due to the amount of hoods, there was no other feasible option than the RENA Kitchen solutions system. Each system is installed at a remote location, feeding ozone through tube to multiple hoods independently with the help of automatic valves and sensors – ensuring optimal operations and safety.
Also, the systems are easily accessible for the annual maintenance which can be carried out during regular business hours without interrupting the activity at the restaurants thanks to the remote location.
Östermalms saluhall is the oldest operating market in Stockholm and is relied upon to provide fresh vegetables, fruits and outstanding meat for the capital citizens.
