Craft brewery replaced acid disinfection with ozone
Introduction.
Our current client is one of the fastest-growing craft breweries in Sweden, and is known for having a green, eco-friendly profile. They have now taken further steps to lower their environmental impact by implementing ozone technology in their daily operations.
The brewery is located in a medium-sized Swedish suburb; they reside in top-modern facilities that can easily handle the ever-expanding demand for their beers. They produce many popular beers at the brewery, such as Russian Imperial Stout and Belgian Wit.
The problem.
A rapidly increasing production also means higher costs when it comes to buying, handling and storing chemicals and other consumables. After each production cycle, the brewery staff needed to handle and fill the machines with peracetic acid, which was the chemical solution that they used to disinfect the fermentation tanks. Peracetic acid is a common sanitation agent, but it requires careful handling and process equipment needs to rinsed thoroughly afterwards to make sure that the beer does not contain any by-products.
The team of brewers needed a more sustainable alternative to this chemical treatment solution. Ozone was chosen to replace the current sanitation agent.
The solution.
As a joint project with Mellifiq, an Ozonetech high-performance ozone solution was implemented in the existing Clean-in-Place system. When sanitating process equipment using ozone, it is crucial to have a high performance ozone system that is oxygen-fed, water-cooled and equipped with an integrated gas-liquid ozone transfer mechanism.
By using one of our Ozonetech RENA Vivo systems, the brewery can produce and use ozone in a safe manner and only when they need it for sanitation purposes. Thanks to this, the staff can now avoid using peracetic acid. The ozone comes into play after the process equipment has gone through an initial caustic cleaning step.

Evaluation.
After the fermentation tanks and the filling machine had been sanitized using ozone, we validated the disinfection results through an ATP analysis.
The brewery is very pleased that our Ozonetech RENA Vivo system is able to deliver outstanding results that meet their high expectations. Thanks to our RENA Vivo, the brewery staff can now enjoy their new, acid-free working environment!
